Carbonaro’s Fast-Casual Italian Coming To San Diego State University

A new fast-casual Italian restaurant, Carbonaro's, is set to open soon near the San Diego State University campus.Ìý

Carbonaro's is opening in the former Lolita’s Mexican Food space in San Diego's College Area. The fast-casual Italian eatery concept is founded by Andrea Carbonaro, Mariano Liga, Giuseppe Cascia, Ercole Rubino, who also manage other local Italian dining spots, including Trattoria da Sofia in Kensington and Aromi Italian Cuisine in La Mesa.

The menu at Carbonaro’s will focus on fresh pasta bowls that can be tailored to individual preferences, using imported Italian ingredients. The restaurant plans to operate seven days a week, from 11am to midnight, catering to the busy schedules of students and locals alike.

The interior design of the establishment will feature Pop Art-inspired decor, blending elements of high art and popular culture from the 1950s and 1960s. This aesthetic aligns with the restaurant’s goal of making high-quality Italian cuisine accessible and approachable. With a focus on creating a welcoming and affordable dining experience, the brand plans to expand beyond SDSU, with a second location already in development and potential plans for franchising in the future.Ìý
