San Diego's Trattoria Cori Pastificio Offers Locally Made Italian Panettone For The Holidays

As the holiday season approaches, Trattoria Cori Pastificio in San Diego's North Park neighborhood is offering its own homemade panettone, a cherished Italian Christmas sweet bread.Ìý

Cori Pastificio's panettone is made fresh locally in collaboration with renowned Panettone Master Giancarlo from Verona, using homemade candied fruit. Those interested in purchasing one of these artisanal creations must call the restaurant to reserve their panettone in advance.

Panettone, which originated in Milan, is an Italian Christmas ritual. This dome-shaped sweet bread, studded with candied fruit and raisins, has a light and airy texture that belies the intricate process behind its creation. Historically, panettone dates back to the Middle Ages and has become a symbol of Italian festivity, enjoyed by families during holiday meals or as a gift to loved ones. For many Italian Americans, panettone serves as a culinary link to their heritage, embodying the joy and warmth of Christmas.Ìý
Trattoria Cori Pastificio is helmed by acclaimed Sicilian-born Chef Accursio Lota, whose passion for authentic Italian cuisine has earned him a reputation as one of San Diego's top chefs. Originally from Menfi, Sicily, Lota's culinary journey began at an early age when he represented his school at a national culinary competition. After honing his skills at the Four Seasons in Milan and later in California, Chef Lota became known for his innovative approach to Italian cuisine, blending traditional flavors with modern techniques.

Chef Lota first made his mark in San Diego at The Marine Room in La Jolla before moving on to create Limone, an underground fine dining pop-up. He later became the Executive Chef at Solare, earning numerous accolades, including winning the 2017 Barilla Pasta World Championship. In 2020, Chef Lota and his wife, Corinne Goria, opened Trattoria Cori Pastificio, which has been recognized as one of San Diego's finest Italian restaurants.

Building on the success of Cori Pastificio, Chef Lota is preparing to open a new coastal Italian restaurant near the La Jolla Playhouse on the UC San Diego campus. Slated to debut in summer 2025, this 120-seat eatery will specialize in coastal Southern Italian cuisine, emphasizing fresh, locally sourced seafood, house-made pasta, and gelato. Designed by the architectural firm Bells + Whistles, the restaurant will feature an open kitchen and both indoor and outdoor dining spaces.

With his commitment to quality and authenticity, Chef Lota's panettone is a perfect addition to holiday celebrations. By collaborating with Panettone Master Giancarlo, Trattoria Cori Pastificio ensures that each loaf reflects the dedication and artistry behind this beloved Italian custom.

Trattoria Cori Pasticio is located at 2977 Upas Street in San Diego's North Park.ÌýFor more information or to reserve your panettone, call 619.573.6159 or visit .Ìý
