Founded in 2022 as a cottage food operation by Mike Rabinowitz, a Brooklyn-born and Long Island-raised former chemist, Marigold Bagels was built on a dedication to bringing authentic New York-style bagels to America's Finest City. Marigold has been selling at area farmers markets, particularly the Mission Valley Civita market, with pre-order pickups also available on Sundays in Point Loma.ÌýThe shop's offerings stand out for their nod to tradition: smaller, chewier bagels with blistered, crispy crusts - a style reminiscent of classic New York bagels from decades past.
Mike spent over a year perfecting the Marigold bagel recipe, which relies on high-quality ingredients and time-honored techniques. Each bagel is made using unbleached wheat flour, malted barley, pure cane sugar, salt, and yeast, with no artificial dough conditioners or enhancers. The bagels are hand-rolled, cold-proofed, boiled in malt-syrup-infused water, and carefully baked to achieve the perfect texture and flavor. This meticulous process results in bagels that are crisp on the outside, satisfyingly chewy on the inside, and rich in flavor.
"Our journey started with a passion for recreating the bagels we grew up eating but couldn’t find here," explained Marigold Bagels ownership. "Every single bagel is made with love and care, using high-quality ingredients and traditional methods to achieve that perfect balance of chewy and crisp."
Marigold Bagels will take over the space on El Cajon Boulevard in North Park that was previously home to Bunny Chow South African restaurant and The Barn Brewery before that. The menu is set to include a wide variety of bagel flavors such as Everything, Jalapeño Cheddar, Asiago Cheese, Za'atar, Onion, Poppy, Sesame, and more. Cream cheese spreads like Green Scallion, Garlic & Chive, and Plain will be available, along with breakfast sandwiches, coffee drinks, and a selection of smoked fish. There are also plans to activate a beer and wine license in the future.
"While we don't have a grand opening date just yet, stay tuned - we'll be sharing updates along the way," read a post on the company's Instagram page. "During this transition, we'll continue our online Drops but will be pausing our return to the Mission Valley Farmers Market until the shop opens, allowing us to serve more bagels and provide an even better experience.
