Chef Hanis Cavin is a San Diego native and classically trained most widely known as the founder of Carnitas' Snack Shack, which first opened on the outskirts of San Diego's North Park neighborhood in 2011. Carnitas' Snack Shack eventually expanded with a now-closed Del Mar branch, a restaurant along San Diego's waterfront Embarcadero, and branches inside Petco Park.
In 2018, Cavin collaborated with Chef Willie DePascale and David Cohn of Cohn Restaurant Group to openÌýThe Pioneer, a barbecue-focused eatery in East County. Despite some closures in the Carnitas' Snack Shack lineup, including the original North Park site in 2019, Cavin’s influence persisted. He laterÌýmoved to Spokane, WA, working as corporate chef with fellow San Diego culinary veteran Chad White.
Upon his return to San Diego in 2022, Cavin joined Buona Forchetta Group for the opening of GP Diner in Encinitas before departing the company soon after. Chef Hanis reportedly continues to have ownership interests in the Carnitas' Snack Shack brand, as well asÌýThe Friendly Tavern, which moved into the space where his original Carnitas' Snack Shack location sat in North Park.
Chef Hanis has now joined Italian-native Giuseppe Ciuffa's . Ciuffa, also a San Diego culinary stalwart, operates popular La Jolla establishments such as Caroline’s Seaside Café at the Scripps Forum, Candor, and Giuseppe's at The Conrad. One of his more notable ventures was Bottega Americano, a bold concept that blended Italian-inspired cuisine with a specialty food marketplace in San Diego's East Village. Though the restaurantÌýclosed in 2018, Ciuffa's influence on the city's culinary scene remained strong. The recent addition of the 15-year-old Enoteca Adriano Italian restaurantÌýunderscores the group's growth under Ciuffa’s leadership, which is now further enriched by Chef Cavin’s extensive expertise.Ìý
