Chef Danilo Tangalin Parts Ways With North Park's Bivouac Ciderworks

Longtime San Diego chef, Danilo "DJ" Tangalin, is currently on vacation in the Phillipines, but word on the street is he has parted ways with North Park's Bivouac Ciderworks, which he helped to launch early last year. The NJ native chef hopes to open his own modern Filipino restaurant in San Diego.

Before behingÌýhired to develop the menu and lead the kitchen at Bivouac Ciderworks in June 2017, Chef Danilo Tangalin was theÌýExecutive Chef of Tidal at Paradise Point. Before that, Chef DJ was the Executive Chef at Eat.Drink.Sleep's JRDN restaurant at Tower23 Hotel in Pacific Beach from Spring 2015 until he was appointed to oversee the launch of the company's ambitious Decoy restaurant at the renovated Lakehouse Hotel & Resort in San Marcos, which opened in August 2016. Chef Tangalin has also spent time in some of the country's most esteemed kitchens including Le Bernardin with Eric Ripert, Volt with Bryan Voltaggio, Cyrus with Douglas Keane and Coi with Daniel Patterson. Settling in San Diego, DJ worked as chef de cuisine at Prepkitchen before joining the team at Eat.Drink.Sleep. as a sous chef at JRDN in 2014.

Founded by owners Matthew Austin & Lara Worm, Bivouac Ciderworks is a cider brewery & gastropub inspired by the minimalist explorer which opened in January 2018. There is currently no word on who will be taking over as Executive Chef with DJ's departure. Chef DJ will take some time off to spend with his family and is in the process of finding a space to open a modern Filipino restaurant somewhere in San Diego, likely in the North Park area. In the meantime, DJ will be cooking at various area events and special dinners.
